This weekend was extended due to holiday break.
This past Thursday was Thanksgiving, and we had half of the week out.
Can you say fantastic?
I got to spend some much needed time with my family, and I made an amazing Thanksgiving meal.
There were a few tips I would love to share when cooking a holiday meal. Things like, it's OK to take shortcuts when making a full meal. What I mean is, some of my meal was already made for me, like my ham and my sweet potatoe souffle. Now, normally I make the souffle, but this year, I said I wanted a break. Standing in the kitchen peeling, boiling and souffleing sweet potatoes takes some time, and when you add a couple of glasses of wine to that...well... by taking this shortcut added more time for me sit and do nothing. Another short cut I took was dealing with frozen vegetables Some people are rolling there eyes right now, but let me just say I used frozen collard greens and they were right on point. Just think, I did not have to wash, rinse, and wash again. I cut straight to cooking with those suckers, and with a lot of love, and much seasoning, they were really good.
As far as deserts go...well, I made brownies...and..they sucked..needles to say, I will take my advise fully for Christmas, and buy a desert.
Be well, Joi
*stay tuned this week for post on my views on Christmas shopping for me, the kid, and family. Considering that I hate crowds, spending unnecessary money, and just the overall feeling of being rushed should tell you this post are honest and rant filled.
